
Scott, Matt and Randy
Our friend Scott is a Dentist for the Army. He has been assigned to a base in the area for the last little while; it has been great having him around. Unfortunately Scott drew the short straw and won a free vacation to the sandbox. He ships out next month. Matt, our new friend who works with Scott, is also heading to the same area shortly after. He is sending Scott out first to scout out all the good beaches.
Since Scott was sad about having to miss Thanksgiving in November, Tasha volunteered her Mom (Helen) to make Thanksgiving dinner for the bunch of us tonight. Helen is in town on vacation. She was so nice to prepair the most delicious turkey, killer stuffing and creamy mashed potatoes. Susan and Tasha helped her with the feast and we all brought side dishes: candied yams, green bean casserole, pistachio jell-o salad and our favorite pretzel jell-o.
It was fantastic! And it was kind of cool because you did not feel like you had to stuff yourself because it was going to be a whole year before you would get to eat this good again. You could just eat and enjoy knowing full well that you were going to get to partake of this deliciousness again in less than two months. Well, we could, Scott and Matt had to savor it.
After we were all sufficiently full we still made room for dessert: lemon bars, pumpkin pie, and pumpkin spice cake with rich cream cheese frosting. Thanks ladies, especially Helen, for making the Thanksgiving feast and bringing the group together. It was a great night.
ps, I put links above to the pumpkin dessert recipes that I used. I have gotten nothing but great reviews on the pumpkin pie the three times I've made it (although I cheat and use pre-made crust). The cake is totally easy, but you are going to want to make a 3 ingredient cake by adding two eggs to the batter. Enjoy!
