wedding cake


Compared to the grooms cake, the wedding cake was a walk in the park. I actually liked making this one. The cake was three tiers stacked on top of eachother - 16x16, 12x12 and 8x8 squares.

I emptied out our freezer to house those cakes. My poor roommates put up with alot this past week.


The bottom layer was Italian Cream cake - white cake with coconut, chopped pecans and almond flavoring. Courtney wanted the entire cake this flavor, but I suggested that maybe some people might not like coconut or be allergic to nuts.


Luckily she listened to me and Tom got to pick the middle layer, Chocolate cake with raspberry filling. The top layer I suggested maybe a Pumpkin Chocolate Chip cake would be a delicious fall choice to compliment the cream cheese frosting Courtney wanted. To my surprise, she said yes.


Ta-dah! Sorry I didn't get pictures in the stages putting together the cake. I was a little stressed. My friend Steph drove up with me (she happens to be dating one of Tom's friends so it worked out perfectly) and helped hold cakes. She also helped me put them together, it was nice to have a second hand to help.


We put in the dowels and dropped the cakes on top of eachother. We slathered the ribbon with frosting and pasted it onto the base of the layers. I added the beaded border to the bottom, stepped back and looked at it. I was proud of myself. But there was something missing. Then I vaguely remembered polka dots on the cake. So I took the frosting bag and went for it.


Luckily the free styling of the dots turned out well. I was rather happy with the cake. There was also supposed to be fresh flowers on the top and strategically placed on the sides, but I told Tom that the florist would have to take care of that. I am not a florist. Nor am I a cake maker. Although I suppose I am now. The cake turned out well. And later that night we found out that it tasted delicious too.
