POTD FAIL


Ladies and Gentle-ladies,

(I don't think any men read this blog)
(maybe David on rare occasion)

It is with a heavy heart (not really) that I announce that the Picture of the Day is done. It got old fast. I am not interesting every day (actually, I am). And I certainly I do not have interesting pictures to post every day (true). And I missed the little things. I liked finding happiness in the simple things around me and sharing it. So goodbye POTD and welcome back the simple things.

whole foods

Today I went crazy in the Whole Foods. I am going to try and (somewhat closely) follow the Eat Clean Diet. The premise of it is eating whole non-processed foods, and smaller consistent meals. Oh, and drinking more water. I may or may not be able to do it. Today I made bran muffins to snack on, my eggs florentine casserole in jumbo muffin tins for easy to grab breakfasts, and bought some yummy granola to put in yogurt. Yum. Hopefully...

Mt. Kilimanjaro

Today Ashley and Scott got back from Africa. They successfully summited Mt Kilimanjaro, went on a couple days of safari in Tanzania, and dove of the coast of Zanzabar. They had a great time. I am so jealous.

asian noodle salad

Susan made the most colorful beautiful dish for dinner tonight. It's a recipe from The Pioneer Woman called Asian Noodle Salad. It is healthy and makes enough to feed an army. We ended up adding a little more soy sauce and brown sugar than it called for but otherwise followed the recipe. Next time we will keep a little more membrane in the chopped jalapeno and I would cut the noodles down a little, maybe just 3/4 a package. I might make it for the boys at work - if it's not too healthy for them.

polkadot platter

Sarah gave me this super cute cake stand. I have no idea why, but I love it. It is red on the top with different sized white polkadots (in case you can't see). This poppy seed cake was hanging around the house so I put it on top, but can't you envision the beautiful chocolate cake that will adorn the tray someday? Or cupcakes? So fun!

they're back!

Remember when the Berget's left me? Well, they called and apologized and begged my forgiveness. I of course accepted their apology and told them to come on back to VA. So they are back. I went down to visit them today (about 30 min away from me) and see their new house. Carson is taking now and Ethan looks so big. I am super excited to have them back.

huffing

Today someone handed me these markers to use. Remember these? The most delicious smelling markers ever??? I sniffed one. And then I sniffed another. Then I had to smell ALL of them. The brown was cinnamon, but my olfactory senses told me it should be chocolate. As I started to wonder if this was considered huffing, I put down the marker and focused at the task at hand. But not before selecting the orange one to write with so I can occasionally indulge in the citrus scent. Mmmm...

sticky buns

So simple. So delicious. So sticky. I first remember these in Michigan. I can't remember who gave them to us, maybe Sister Huber. But I remember they were delicious. I had a sleepover up at Maggie's in Baltimpre this weekend and offered to take care of breakfast. Since she had early church, I wanted something quick and easy to make - but also a sweet treat because it is a holiday. So without further delay...

Sticky Buns

12-20 Frozen Bread Dough Rolls (ie: Rhodes)
1 (3.4 oz) Butterscotch Cook & Serve Pudding
1/2 c. Brown Sugar
1/2 c. Butter or Margarine

Coat a 9x13 pan with some of the melted butter/margarine. Place frozen rolls in the pan (more if the rolls are smaller, less if the rolls are larger - different brands are different sizes). Sprinkle the dry pudding packet and then the brown sugar over the frozen dough. Next drizzle the melted butter over top. Cover with wax paper and let it sit overnight to rise. In the morning bake a 350 degrees for approx 15 minutes. When done, take out of the oven and immediately invert onto a platter. Make sure to let all the yummy butterscotch goo run out onto the rolls.

Note: I made this one with 12 rolls in a bundt pan, they puffed up huge and ran into each other causing the adjoining surface areas to not get coated with the butterscotch/sugar mixture while baking. Next time I will make it in a 9x13 like the above recipe so the yummy sugary goo has more surface area to cover.

Susan called today and said she wanted to make cinnamon rolls. Since she has never made them and I have made them once, that made me the expert. An expert who may or may not have miscounted the cups of flour we added ... because when I went to punch it down - this happened. Oops. But easily rectified.

Drove home through the blizzard today. Visibility was about half to a quarter mile, that was when the wind was being nice. When the wind gusts came up, visibility was like 5 feet. Super scary. But I made it home safe and I haven't left the house since.
